Zucchini Garlic Mashed Potatoes

Garlic mashed potatoes mixed with shredded zucchini and parmesan cheese.

Zucchini Garlic Mashed

Yield: 21 – ½ cup servings

INGREDIENTS

  • 1/2 cOlive Oil
  • 4 c(1-½) shredded zucchini. About 2 medium green zucchini
  • 2 tbspMinced Garlic
  • 1 QuartWater
  • 1-¼ tspSalt, Kosher
  • 1 QMilk
  • 1 PouchPotato Pearls® Natural Mashed Potatoes
  • 1 cShredded parmesan cheese

Instructions

  1. Heat convection oven to 350º F, or a steamer to full steam.
  2. Heat oil, over medium-high heat, in a large sauté pan until hot.
  3. Stir in zucchini and garlic.
  4. Cook zucchini and garlic, stirring frequently, until zucchini gives up most of its moisture, and garlic is very fragrant, about 5 minutes. Remove from heat and set aside.
  5. Heat water and salt to boiling in a 4-quart saucepan. Remove from heat.
  6. Stir milk and zucchini mixture into water.
  7. Add full pouch of Potato Pearls® Natural Mashed Potatoes and parmesan cheese stirring gently until evenly moistened, about 15 seconds.
  8. Transfer potatoes to a 2-½” deep half-steamtable pan.
  9. Heat potatoes in oven until lightly browned or steamer until potatoes reach a minimum of 135°F, about 10 minutes.
  10. Place in steamtable pan and serve.

Cold Cooking Preparations

  6. Add full pouch of Potato Pearls® Natural Mashed Potatoes stirring gently until thoroughly moist, about 15 seconds, let rest for 5 minutes to fully hydrate
  7. Refrigerate until ready for service
  8. Portion or Pump
  9. Heat for service as follows:
  10. About 45 seconds per ½ cup, individual, portion on a microwave-safe serving dish, in a microwave oven on high until potatoes reach a minimum of 135º F;
  11. Or about 15 minutes for a microwave-safe 2-½” deep half-steamtable pan in a microwave oven on high, gently stirring twice during heating, until potatoes reach a minimum of 135º F;
  12. Or about 30 minutes for a 2-½” deep half-steamtable pan in a steamer on full steam until potatoes reach a minimum of 135°F.
